Beer: Lite Ale Style: English Light Mild
Type: All grain Size: 5 gallons
Color:
6 HCU (~5 SRM)
Bitterness: 29 IBU
OG: 1.042 FG: 1.005
Alcohol: 4.7% v/v (3.7% w/w)
Water: Soft water & charcoal filtered, boiled 6.5 gallon to 6 to remove any residual chlorine.
Grain: 5 lb. American 2-row
.5 lb. American crystal 40L
Mash: 80% efficiency
Step Mash. 104 F/ 30min, 140 F@30min, 148 F@60min, Sparge @ 175 and luster to about 6 gal. Full wort boil of 6 gallon, boil down to about 5.5 gallon before starting hop schedule.
Boil: 90 min minutes SG 1.035 6 gallons
1 lb. Belgian candi sugar
Boil @ 6 gallon 45 min, then begin hop schedule. Irish moss can be used in last 15 min. Definitely use 1 tsp yeast nutrient in last 15 min.
Hops: 1 oz. Hallertauer (4.25% AA, 45 min.)
1 oz. Fuggles (4.75% AA, 15 min.)
1 oz. Fuggles (4.75% AA, 5 min.)
1 oz. Fuggles (4.75% AA, 1 min.)
Yeast: Wyeast London ESB prefered (floculates very clear with a high attenuation)
Log: This is my first all-grain of this recipe and determined my mash efficiency was 80% when I thought at best I'd get 70%!! My previous batches only used Fuggles hops (my favorite English hop), but this time I had an ounce of Hallatauer (and an ounce short of Fuggles). .
Carbonation: 2.0 volumes Keg: 21.8 psi @ 72°F
You can artificially carbonate as printed. I prefer to rack to the 5 gal carboy with 2/3 cup priming sugar and naturally carbonate for 7-10 days and then keg-to-keg transfer off sediment and tap from the keg or counterpressure fill. Lot's of transfering, but the result is a highly clarified ale with a think, creamy dense head.
Tasting: Should be a very clear, highly carbonated "low carb" session beer. Carmel color, maltiness balances with the citrus notes from the Fuggles hops and a light body and decent head retention. Enjoy
