Biggles' Bitter

Biggles is a fictional British pilot lampooned in Monty Python.

OG: 1.034 FG: 1.008
Alcohol: 3.4% v/v (2.7% w/w)
Water: Used boiled water throughout to drive off chlorine. Added 2 tsp
gypsum and a pinch of Epsom salts to Burtonize my water. Check your
local water report to determine the proper amounts to use.
Grain: 6 lb. British pale
8 oz. British crystal 50-70L
Mash: 70% efficiency
Single-step infusion mash at 151°F for 75 minutes. Mashed out at 160°F
for ten minutes (undershot the 165 I intended).
Boil: 60 minutes SG 1.024 7 gallons
1 tsp Irish Moss (rehydrated, added 45 minutes into the boil)
Hops: 1 oz. Kent Goldings (5.6% AA, 60 min.)
.5 oz. Kent Goldings (5.6% AA, 15 min.)
.5 oz. Kent Goldings (aroma)
Yeast: Wyeast #1098 British Ale, made a starter a day in advance.
Log: Primary: four days at 70°F. Secondary: three days at 70°F, four days
at 60°F.
Carbonation: Four gallons kegged and forced carbonated. One gallon bottled with
1/10 cup corn sugar.
