Grain: 12 lb. American 2-row
1 lb. Belgian biscuit
1 lb. American crystal 60L
.25 lb. American chocolate
Mash: 65% efficiency
mash in 4.5 gal. @155 deg. Sparge with 5 gal. @175deg.
Boil: 60 minutes SG 1.052 6.5 gallons
Irish Moss for final 15 min.
Hops: 1 oz. Northern Brewer (8.5% AA, 60 min.)
.5 oz. Kent Goldings (5% AA, 45 min.)
.5 oz. Fuggles (4.75% AA, 30 min.)
.5 oz. Kent Goldings (5% AA, 15 min.)
1.5 oz. Fuggles (aroma)
Yeast: Wyeast London Ale in 1qt. starter
Log: dry hop with 1/2 oz. Fuggles
