20 HCU (~12 SRM)
Bitterness: 73 IBU
OG: 1.062 FG: 1.009
Alcohol: 6.9% v/v (5.4% w/w)
Water: Henkly & Scmidt Mineralized Water
Grain: 1 lb. American crystal 20L
Steep: Caramel grains in bag in cold water. Steep til 160° and hold for 5 minutes. Dunk bag in water till drip is 'clear'.
Boil: 90 minutes SG 1.062 3 gallons
3 lb. Light dry malt extract
1 lb. Amber dry malt extract
1 oz. Irish Moss in at 75 minute mark.
Hops: 1.00 oz. Fuggles (4.5% AA, 60 min.)
.5 oz. Chinook (12% AA, 40 min.)
.5 oz. Chinook (12% AA, 20 min.)
1 oz. Saaz (aroma)
Yeast: Wyeast American Ale II - 2nd generation. Harvested from bottled beer with 12 oz. 1.020 wort, flocculate, pour off liquid leaving sediment, ferment again with 12 oz. 1.020 wort, flocculate. All of starter used in ferment.
Log: Brewed - 5/6/99 7pm.
Active fermentation - 5/7/99 9pm.
Bottled from primary - 5/22/99 3pm.
Carbonation: 3.3 volumes Corn Sugar: 3.97 oz. for 3 gallons @ 70°F
Tasting: KICK ASS! After 2 weeks bottle conditioning this beer tastes really good. After 4 weeks in the bottle, it is simply amazing. It's crisp with lots of good hop flavor and bitterness.
