Behold a Pale Ale

Type: Partial mash Size: 4.75 gallons
Color:
15 HCU (~9 SRM)
Bitterness: 42 IBU
OG: 1.054 FG: 1.014
Alcohol: 5.2% v/v (4.1% w/w)
Water: Use tap water filtered with a commercial activated-carbon system. If you have good tap water you can probably skip this step, but mine is terrible.
Grain: 3 lb. American 2-row
1 lb. American crystal 40L
Mash: 75% efficiency
Mash grains in water at 150°F for 60 minutes, then sparge with 170°F water.
Boil: 60 minutes SG 1.051 5 gallons
4 lb. Light malt extract
Add liquid malt extract, fill to 5.5 gallons, and boil for 60 minutes.
Hops: .67 oz. Centennial (8.7% AA, 60 min.)
.5 oz. Amarillo (8.9% AA, 15 min.)
.5 oz. Simcoe (10.1% AA, 15 min.)
.5 oz. Amarillo (aroma)
.5 oz. Simcoe (aroma)
Yeast: Nottingham Ale Yeast

Primary: 9 days at ~66°F
Secondary: 12 days at ~66°F
Cold conditioned in keg: 7 days at 38°F
Carbonation: 2.5 volumes Keg: 10.2 psi @ 36°F
Tasting: Very pleasant and easy-drinking. This started out as a hops experiment, and the combination of Simcoe and Amarillo is fantastic. Next time, I'll reduce the bittering hops slightly to let the flavor dominate more.
