fall's choice

second time i've used the munic grain, both times it turned out good,
took 6 hours start to finish, easy brew with no problems

Bitterness: 36 IBU
OG: 1.053 FG: 1.014
Alcohol: 5.0% v/v (3.9% w/w)
Water: use water purified by reverse osmosis, added gypsum to 7.8 ph.
in the mash and sparge water
Grain: 14 lb. American 2-row
3 lb. American munic
2 lb. American crystal 10L
2 lb. Dextrine malt (Cara-Pils)
Mash: 70% efficiency
bring 6.5 gal.water to 160° add all grains and adjust temp to 152°
at 60 min. stir and test with iodine, adjust temp to 152° and mash 60 more min., test again and mash out at 168° for 5 min.





Boil: 60 minutes SG 1.044 12 gallons
added 2 oz. northern brewer hops pellets when i turned on the heat
at 3 gal. sparged till 12 gal., added chiller and 2 whirlfloc tablets
for 15 min. add 2oz.domestic fuggle loose raw hops in a bag last 5 min.
Hops: 2 oz. Northern Brewer (9.8% AA, 60 min.)
2 oz. Fuggles (aroma)
Yeast: at 82deg. added 11.5g. safale s-04 yeast to both 5 gal. carboys
no starter
Log: brewed 10/14/06 6am to 12am, fermentation temp. 60 deg.
racked 10/17/06, keged 10/21/06
Carbonation: 32 psi. co2 and agitate 10 min. put in kegerator at 40 deg.
next day 32 psi. co2 and agitate 15 min.
Tasting: very good brew, might dry hop in keg with domestic cascade next time
