Penny Lane Copper Ale

Chuck at "What Ale's Ya" in Glendale noted that the ingredients were similar to Papazian's Lip's Lager - but the difference ends there. Brewed to be a dark copper color, richly hopped American Pale Ale.

Bitterness: 58 IBU
OG: 1.070 FG: 1.016
Alcohol: 6.9% v/v (5.4% w/w)
Water: First batch utilizing Potassium softened and filtered water in our new house. No gypsum in this batch - trying to get a baseline on the new Mycek Brewery water.
Grain: 0.50 lb. American victory
1.00 lb. British crystal 70-80L
Steep: Steeped grains for 30 min @ 150°. Sparged with 1 gallon of 180° water - bringing the initial volume up to 6 gallons.
Boil: 60 minutes SG 1.058 6 gallons
7.00 lb. Light dry malt extract
Darn... forgot the Irish Moss again...
Hops: 1 oz. Northern Brewer (9.3% AA, 60 min.)
1 oz. Simcoe (12% AA, 15 min.)
1 oz. Cascade (7.0% AA, 5 min.)
1 oz. Simcoe (aroma)
Yeast: Fresh Wyeast American Ale yeast - pitched at 80°
Log: 1 week in the primary @ 69°. Racked to secondary. Added one bag of light toast oak chips and 1 oz. Simcoe Hops.
Carbonation: 2.4 volumes Keg: 11.2 psi @ 40°F
