Windswept Pale

Type: Partial mash Size: 22 liters
Color:
10 HCU (~7 SRM)
Bitterness: 36 IBU
OG: 1.055 FG: 1.014
Alcohol: 5.3% v/v (4.1% w/w)
Water: Canberra Water
Grain: 2.5kg Barrett and Burston Ale Malt
400g CaraHell(es)
100g Barrett and Burston Dark Xtal
Mash: 70% efficiency
Mash at 67-68°
Boil: 60 minutes SG 1.048 25 liters
1.5kg Light dry malt extract
5 minutes out add Irish Moss (whirlfloc)
Hops: 15g Cascade (6% AA, 60 min.)
15g Centennial (10.9% AA, 60 min.)
15g Cascade (6% AA, 15 min.)
15g Cascade (6% AA, 5 min.)
10g Centennial (10.9% AA, 5 min.)
10g Cascade (aroma)
10g Centennial (aroma)
Yeast: I used wyeast 1028 but I am sure there is a better one! It's what I had at the time
Log: Added ~20g of Northern brewer on racking to secondary (breifly added to boiled water then added straight to the ferm).. It was the only aroma hop I had on hand
Carbonation: 100g bulk prime (for the 23l) of dextrose
Tasting: Interesting Ale... The 1028 yeast gives a very clean finish... while some might like it I am not to sure of the mineraly taste though (ESB like) Hops worked well... Norther brewer dry hop added a nice tough even though a bit odd for this style... Colour was a bit darker than the calculation...

Overall a very nice beer.. Oh it throws a nasty chill haze though...

Next time:
*Use a different yeast
*Cold condition for some time to try to get rid of the CH...
