True North Pale Ale

A true American-style pale ale. The first wiff of this
beer is heaven. The first sip does not disappoint and
at the end you can still taste the malt. Full of flavor
without killing your taste buds.

Type: Extract w/grain Size: 5 gallons
Color:
22 HCU (~12 SRM)
Bitterness: 66 IBU
OG: 1.072 FG: 1.018
Alcohol: 7.0% v/v (5.5% w/w)
Water: 1 tsp. Gypsum in tap water.
Grain: 2 lb. American Vienna
8 oz. American crystal 20L
8 oz. Dextrine malt (Cara-Pils)
Steep: I soak the grains in about a gallon of water at 160° F and let rest for 45 minutes. I then strain out the grain and run another 2 quartz of 160° F water through it like a simple sparge. Putting the results in my brew pot.
Boil: 60 minutes SG 1.056 6.5 gallons
5 lb. Amber malt extract
3 lb. Light dry malt extract
Add water so the total is 5.5 gallons for the boil before adding the malt. Bring to boil and take off of heat, add the light malt extract and Chinnok hops and continue boil. 30 minutes into the boil remove from heat and add the amber extract and Cascade hops. Since the extracts don't need the boil time that grain malts do, I add the bulk of them later to avoid carmelization which affects flavor and darkens the beer. Add the .5 oz of Amarillo with 15 minutes remaining in the boil.

1 tsp of Irish Moss in last 20 minutes of boil.
Hops: .75 oz. Chinook (12% AA, 60 min.)
1 oz. Cascade (6% AA, 30 min.)
.5 oz. Amarillo (9% AA, 15 min.)
1.0 oz. Amarillo (aroma)
Yeast: WYeasst 1272 American Ale II pitched from the smack pack.
Log: I do a Gerard's Tea with the 1 oz of Amarillo after primary fermentation is complete approx. 4 days. Gerard's Tea means soaking the hops in 160° F water (just enough to cover the hops) then add it to the fermenter as it cools. Let stand in the fermenter for another week.
Carbonation: 2.2 volumes Corn Sugar: 3.66 oz. for 5 gallons @ 70°F
Tasting: Very full bodied and aromatic. When young this leans towards the fruitier citrus Amarillo hops, as it ages the Chinook and Cascade take more prominence.
