8 oz. American crystal 60L
2 lb. American Munich
2 lb. Dextrine malt (Cara-Pils)
Mash: 68% efficiency
Boil: 90 minutes SG 1.056 13 gallons
Iris Moss last 15 min.
Hops: 4 oz. Northern Brewer (10.1% AA, 60 min.)
2 oz. Amarillo (7.9% AA, 30 min.)
2 oz. Amarillo (7.9% AA, 15 min.)
6 oz. Cascade (aroma)
Yeast: 1056. Pitched about 3 pints of slurry. Took off like a bandit.
Log: 1 week primary
1 week secondary with hops
1 week at 38°
Carbonation: 25 psi for 48 hrs. Serve at 5-8 psi.
Tasting: I kegged beer yesterday. Beer is crystal clear and taste great.
I will tap one keg for wife's birthday and the other right before
Christmas. The bitterness is not as great as it show. This beer is
not for the weak of heart.
