Alcohol: 4.1% v/v (3.2% w/w)
Water: Flitered (.5 micron) Tap water.
Grain: 9.5 lb. American 2-row
1 lb. American crystal 40L
Mash: 65% efficiency
Single Infusion mash. Strike at 168°F, hold at 153° until startch conversion.
Boil: 60 minutes SG 1.033 7.5 gallons
2 oz. Irish Moss
Add Irish moss with 10 min remaining in the boil.
Hops: 1 oz. Centennial (9% AA, 60 min.)
1 oz. Cascade (6% AA, 45 min.)
1 oz. Centennial (9% AA, 15 min.)
Yeast: Pitch 1 vial of WLP001 California Ale Yeast at 75°F.
Log: Primary for 1 week at 66°-69°F.
Dry hop 1oz Cascade in secondary for 2 weeks at 66°-69°F.
Carbonation: 2.5 volumes Keg: 11.2 psi @ 38°F
Half will be kegged, other half will be bottled with 3/8 cup corn sugar for 2.5 gal of beer.
