Freedom Trail Pale Ale

A beer to celebrate Boston, Massachusetts -- the true birthplace of America. The malts are all-American in name and the hops are American with great names Liberty and Centennial. It was a fun beer to design along a theme.

Alcohol: 5.2% v/v (4.1% w/w)
Water: Spring or filtered water
1tsp gypsum per 5 gallons
Grain: 9 lb. American 2-row Pale Malt
8 oz. American Victory Malt
8 oz. American Crystal Malt (40L)
8 oz. Dextrine Malt (Cara-Pils)
Mash: 75% efficiency
Single-step infusion mash: 152°F for 60 minutes.
Boil: 90 minutes SG 1.044 6.5 gallons
1tsp Irish Moss (15 min)
Hops: 1 oz. Centennial (10.5% AA, 60 min.)
.5 oz. Liberty (4% AA, 10 min.)
.5 oz. Liberty (4% AA, 1 min.)
1 oz. Liberty (dry-hop) (aroma)
Yeast: Wyeast American Ale #1056 (of course)
Carbonation: 3/4 cup priming sugar (corn sugar)
