Imperial Pale Ale

Type: Extract w/grain Size: 5.0 gallons
Color:
25 HCU (~13 SRM)
Bitterness: 45 IBU
OG: 1.079 FG: 1.006
Alcohol: 9.4% v/v (7.4% w/w)
Water: Irish Moss 6tsp at 20 minutes
Grain: 1 lb. American crystal 60L
Steep: Steep grains until water reaches 170 then remove grain bag and drain.
Boil: 60 minutes SG 1.090 4.4 gallons
8 lb. Light dry malt extract
.5 lb. Brown sugar
Irish Moss at 20 minutes
Hops: 1.5 oz. Centennial (10.5% AA, 60 min.)
1.0 oz. Cascade (6% AA, 15 min.)
0.5 oz. Cascade (aroma)
Yeast: Wyeast 1056
Log: Whirlpool and rest for 10 minutes.
1 or 2 days after fermentation has begun add brown sugar to beer by dissolve in 1 cup of boiling water.
Dry hop 1oz Cascade hops @ 5-7 days.
