Alcohol: 7.0% v/v (5.5% w/w)
Water: Carbon filtered West Houston tap water.
Grain: 12 lb. American 2-row
8 oz. British brown
1 lb. Belgian CaraMunich
Mash: 75% efficiency
3 gal. of 138° water added to crushed grain, stir, stablize and hold at 128° for 30 minutes. Add 1 gal. boiling water to bring temperature to 150° and hold for 60 minutes. Do starch conversion test at end of mash. Bulk sparge with 5 gal. of 170° water when starch conversion complete. Collect 8 gal. of runoff for the boil.
Boil: 90 minutes SG 1.046 8 gallons
1 tbs. Irish Moss added 15 minutes before end of boil.
Hops: 1 oz. Chinook (12% AA, 60 min.)
.5 oz. Cascade (6% AA, 30 min.)
.5 oz. Cascade (aroma)
.5 oz. Centennial (aroma)
Yeast: 1 pint of White Labs California Ale yeast slurry from prior batch (1 mo. old)
Log: Brewed on 12/11/99. Bottled on 12/26/99. Dry hopped w/1 oz. Cascade.
