Winter Warmer

Type: All grain Size: 5.5 gallons

14 HCU (~9 SRM)
Bitterness: 45 IBU
OG: 1.062 FG: 1.012
Alcohol: 6.4% v/v (5.0% w/w)
Water: Carbon filtered West Houston tap water used. 1 pkg. of Burton Brewing Salts added to the wort during boil.
Grain: 12 lb. German Pilsner
1 lb. Dextrine malt (Cara-Pils)
1 lb. Belgian CaraMunich
Mash: 65% efficiency
3 gal. of 138° water added to crushed grain, stir, stablize and hold at 128° for 30 minutes. Add 1 gal. boiling water to bring temperature to 150° and hold for 60 minutes. Do starch conversion test at end of mash. Bulk sparge with 4 gal of 170° water when starch conversion complete. Collect 7/7.5 gallons of runoff for the boil.
Boil: 90 minutes SG 1.048 7 gallons
1 tbs. Irish Moss added 15 minutes before end of the boil.
Hops: 1 oz. Chinook (11% AA, 60 min.)
.5 oz. Cascade (4.6% AA, 30 min.)
.5 oz. Cascade (aroma)
.5 oz. Centennial (aroma)
Yeast: 1 pint of White Labs California Ale yeast slurry from prior batch.
Log: Dry hopped w/.5 oz. each of Cascade and Centennial.
