Alcohol: 5.8% v/v (4.5% w/w)
Water: Carbon Filter
4 tsp Gypsum to 4 gallons mash water
4 tsp gypsum to 5 gallons sparge water
Grain: 12 lb. American 2-row
8 oz. Wheat malt
8 oz. Belgian biscuit
8 oz. Dextrine malt (Cara-Pils)
1 lb. Belgian CaraMunich I
1 oz. British chocolate
Mash: 70% efficiency
Mash at 152F for 90 minutes using 3.5 gallons (picnic cooler)
Pull 1 gallon decoction to raise to mash out 168 F
Sparge to get 8.5 gallons
Boil: 120 minutes SG 1.051 7.25 gallons
Boil down to ~7.25 gallons before starting hop schedule
Hops: .5 oz. Northern Brewer (10.2% AA, 60 min.)
.5 oz. Willamette (4.6% AA, 60 min.)
.5 oz. Northern Brewer (10.2% AA, 45 min.)
.5 oz. Northern Brewer (10.2% AA, 30 min.)
.5 oz. Willamette (4.6% AA, 30 min.)
.5 oz. Willamette (4.6% AA, 15 min.)
1 oz. Willamette (aroma)
Yeast: Thames valley (wyeast 1275).
Stepped up to 1/2 gallon using 1.060 starter wort
Carbonation: 2.5 volumes Corn Sugar: 4.74 oz. for 5.0 gallons @ 80°F
