Bitterness: 34 IBU
OG: 1.061 FG: 1.016
Alcohol: 5.8% v/v (4.6% w/w)
Water: All water is RO
8 gm. calcium sulfate (gypsum)
2.5 gm.magnesium sulfate (epsom salt)
.5 gm.sodium chloride (non-iodized table salt)
Used 8 gal ro water total, added 4 gal to begining
of boil & 1 gal to end of boil to adjust OG to 1.056.
Grain: 2 lb. Belgian pale
.5 lb. Wheat malt
1 lb. U.S.crystal 60L
Mash: 60% efficiency
Steep all grains in 1 gal of 160 F RO water for 1 hour
then rinse w/ 2 gal. 175 F RO.
Boil: 90 minutes SG 1.048 7 gallons
7 lb. Light malt extract
1 tsp Irish moss @ last 15 min. of boil
Hops: 2 oz. Fuggles (4.1% AA, 90 min.)
.5 oz. Kent Goldings (5.1% AA, 30 min.)
.5 oz. Kent Goldings (aroma)
Yeast: White Labs Burton Ale Yeast #WLP023 direct from tube
(VERY FRESH). Fermentation in < 10 hours.
Log: Dry hop w/ .5 oz. East Kent Golding in secondary carboy
Carbonation: Force carbonate in corney keg
