Type: Partial mash Size: 6.0 gallons
Color:
21 HCU (~12 SRM)
Bitterness: 55 IBU
OG: 1.068 FG: 1.015
Alcohol: 6.8% v/v (5.4% w/w)
Water: 7 gallons of tap water ran thru a G.E. water filter.Let sit for 24 hours. 3 gallons of distilled water for D.M.E.
Grain: 3 lb. American 6-row
2 lb. German Munich
1 lb. American crystal 60L
Mash: 65% efficiency
Single infusion batch sparge. Mash grains with 2 gallons of water at 155° for one hour. Add sparge water (3 gallons)at 172° stir,let sit for 5 minutes and drain.Collect 4 gallons of liquid.If necessary do another charge of sparge water.
Boil: 45 minutes SG 1.058 7.0 gallons
6 lb. Light dry malt extract
Irish Moss at 15 minute mark.Yeast nutrient same time
Hops: 1.5 oz. Centennial (9.4% AA, 45 min.)
1.0 oz. Cascade (6.9% AA, 15 min.)
.5 oz. Centennial (9.4% AA, 15 min.)
1.0 oz. Cascade (aroma)
Yeast: WLP.001 Yeast cake from like style batch.
Log: Ferment at 68° for 2 weeks. Rack into Keg at 45° for one week. Force carb.
Carbonation: 2.5 volumes Keg: 9.7 psi @ 35°F
I like a little more carbonation then style calls for,also I do it slowly by letting it sit for few days before consuming.
