Steve's Incredible Pale Ale

Top of the line gravity I.P.A
This is a good beer to reflect upon while listening to some good Jazz
(Or whatever music you can relax too)

Type: Extract w/grain Size: 22 liters
Color:
17 HCU (~10 SRM)
Bitterness: 54 IBU
OG: 1.054 FG: 1.012
Alcohol: 5.4% v/v (4.2% w/w)
Water: Use labrador Spring Water
"Burtonize" with 1.5 teaspoons of Burton Water Salts
Grain: .5kg American crystal 40L
.5kg American Munich
Steep: 30 minutes at 67°C
Remove grains add Extracts and honey
Boil: 75 minutes SG 1.139 8.5 liters
2.6kg Light malt extract
.4kg Light dry malt extract
.25kg Wheat extract
.1kg Honey
Add .25 teaspoon Irish Moss 15 minutes to end of boil
Hops: 25g Northern Brewer (8.5% AA, 60 min.)
15g Northern Brewer (8.5% AA, 45 min.)
25g Cascade (6% AA, 30 min.)
10g Northern Brewer (8.5% AA, 30 min.)
25g Willamette (5% AA, 30 min.)
25g Cascade (6% AA, 15 min.)
25g Willamette (aroma)
Yeast: Windsor English ale yeast (DANSTAR)
Log: Brew date: January 4, 1999
Ferment at 16° for one week approximately (until major activity subsides)
Rack into secondary fermentor,Dry hop with 25 grams Willamette hops
Bottle 10 days later
Carbonation: 2.0 volumes Honey: 106g for 22 liters @ 17°C
Tasting: Great colour and Long lasting, creamy head
High hop bitterness balanced nicely with honey and caramel malt
Interesting hop flavors that seem to appear in quick succession
Needs a longer maturation to reach its peak
