DP Ale (almost air tight)

DP (Double Penetratior ) Ale
This Recipe should only be tried by the most serious of hopheads.
I use seven ounces of Cascade and Columbus hops. That's a whole lot of bittering and flavor.

12 HCU (~8 SRM)
Bitterness: 118 IBU
OG: 1.068 FG: 1.010
Alcohol: 7.4% v/v (5.8% w/w)
Water: My local water is really good for most beer types and required no adjustments for this style.
Grain: 12 lb. American 2-row
1 lb. American Vienna
8 oz. American victory
8 oz. American crystal 40L
Mash: 66% efficiency
I use a 5 gallon cooler with a false bottom for a tun for this batch I did a 30 minute Protein rest at 122º .5 quart per pound strike at 130º, then I brought the temp up to 150º with .75 quart per pound strike at 180º for 2 hour rest. The protein rest is for clearer beer and not necessary to the recipe a single infusion mash will work just fine, without the extra complication. By the way next time I will drop the protein rest the amount of grain and water pushed my 5 gallon tun to its limit.
Boil: 60 minutes SG 1.056 6 gallons
Hops: 1 oz. Domestic Columbus (16.8% AA, 60 min.)
1 oz. Domestic Cascade (7.3% AA, 60 min.)
1 oz. Domestic Cascade (7.3% AA, 45 min.)
1 oz. Domestic Cascade (7.3% AA, 30 min.)
1 oz. Domestic Cascade (7.3% AA, 15 min.)
1 oz. Domestic Cascade (aroma)
Yeast: Wyeast 1056 American Ale
Log: Hoping schedule is slightly different from what the options in the Beer Recipator allows. Here is the schedule I use.
1 oz Columbus Hops Boiling
1 oz Cascade Hops Boiling
1 oz Cascade Hops (30 min)
1 oz Cascade Hops (20 min)
1 oz Cascade Hops (10 min)
1/2 oz Columbus (5 min)
1/2 oz Columbus (1 min)
1 oz Columbus (dry hop)
Tasting: DP is waiting to go into secondary, I estimate a FG of 1010 to 1012, this is a recipe that I'm still tweaking and it gets better with each evolution. If you are a hop head like myself give this one a whirl.
