Not too bitter but good hop flavor and aroma was what I was going for.

Brewer: Derek Email: -

Type: Extract w/grain Size: 5.5 gallons
Color:
17 HCU (~10 SRM)
Bitterness: 33 IBU
OG: 1.071 FG: 1.015
Alcohol: 7.2% v/v (5.6% w/w)
Water: Tap on this but I have hard water
Grain: 8 oz. American crystal 40L
8 oz. Dextrine malt (Cara-Pils)
Steep: I steeped grains as I heated it to 170 ° and then let it steep for 60 min as it cooled. I actualy used Canadian Honey Malt not the Cara Pills but I did not see it on the list
Boil: 62 minutes SG 1.065 6 gallons
6 lb. Light dry malt extract
2.5 lb. Honey
I used Irish moss in the last 15 min of the boil. I used 2 oz of medium toast oak chips durring 20 min of the boil. I will add 2 more oz durring dryhopping with the 1 oz each of cascadea and willemete leaf hops.
Hops: .5 oz. Cascade (6.3% AA, 62 min.)
1 oz. Willamette (4.3% AA, 62 min.)

1 oz. Willamette (4.3% AA, 12 min.)
1 oz. Cascade (aroma)
1 oz. Willamette (aroma)
Yeast: I used a mix of coopers dry ale and Nottingham, I made a starter while the grains were steeping and after I pitched the yeast it was bubbling the airlock non stop in 5 hours and kept up at that pace all night (still going now)
Log: Brewed on 4-26-05 will let sit in primary until bubbling drops to 1-2 per min then I will put in carboy for secondary.
Carbonation: I will force carbonate with co2 at 30psi for several days
