Winter IPA

Based loosely off of SSOS, bumped to 10 gallons and with some of the bittering hops taken out.

Beer: Winter IPA Style: India Pale Ale
Type: All grain Size: 9.5 gallons
Color:
11 HCU (~8 SRM)
Bitterness: 88 IBU
OG: 1.071 FG: 1.016
Alcohol: 7.1% v/v (5.5% w/w)
Water: Five-Star 5.2 in the mash water and campden tablets in all water to remove chlorine and chlorimine.
Grain: 24 lb. 2-row
1 lb. Wheat Malt
1 lb. 120L crystal
Mash: 70% efficiency
Single infusion mash @ 151F for 60 minutes. Raise to 170F for 10 minute mashout. Sparge with 175F treated water until 11.75 gallons is collected.
Boil: 90 minutes SG 1.057 11.75 gallons
Forgot the irish moss.
Hops: 3 oz. Chinook (flowers) (12% AA, 60 min.)
4 oz. Kent Goldings (flowers) (5% AA, 30 min.)
4 oz. Fuggles (flowers - while chilling) (aroma)
0.5 oz. Fuggles (flowers - dry-hop) (aroma)
Yeast: 4 packs of Danstar Nottingham, rehydrated.
Log: Brewed December 4, 2004. Total time: 5:45.
Ferment for two weeks at 65°F. Beano added after a stall at 1.026.
Tasting: First sample (1 day after kegging) was slight harsh with a very grapefruit-like bitterness. Dry-hopped with 1/2 ounce Fuggels in the keg, and 2 weeks later, the beer is completely different. Great hop aroma, hazy golden color, and the grapefruit has completely mellowed out to a smooth, well-rounded bitterness. This is a great IPA. The only minor changes I will make in the next batch are: Irish moss, more dry hops (3/4 oz), let it ferment slightly dryer.
