Jamaican Pale Ale (dunno if Jamaican's like IPA but I like IPA and Jamacia, so.....it does make one IRIE!!)

Type: Extract w/grain Size: 6.5 gallons
Color:
15 HCU (~9 SRM)
Bitterness: 34 IBU
OG: 1.057 FG: 1.017
Alcohol: 5.2% v/v (4.1% w/w)
Water: Hard Raw Water
Grain: 0.5 lb. American crystal 20L
Steep: Crystal in grain bag & bring to just before boil, remove grain bag and add LME & boil hops
Boil: 60 minutes SG 1.149 2.5 gallons
6.6 lb. Light malt extract (LME)
3.3 lb. Amber malt extract (LME)
Add flavor hops @ 30 minutes
Hops: 0.50 oz. Simcoe (12.2% AA, 60 min.)
0.75 oz. Centennial (9.8% AA, 60 min.)
0.75 oz. Yamhills (9.0% AA, 60 min.)
0.75 oz. Centennial (9.8% AA, 30 min.)
0.75 oz. Yamhills (9.0% AA, 30 min.)
0.50 oz. Centennial (aroma)
0.50 oz. Yamhills (aroma)
Yeast: Wyeast 1056, American Ale
73 > 77%, 60 > 72F
Log: All hops full leaf hops. Pitched yeast @ 75F, Racked to secondary on February 7, 2004 - Grav. 1.024 & Dry hopped with Aroma hops.
February 27, 2004 - Grav. 1.018
March 7, 2004 - Grav. 1.017 (Bottled)
Carbonation: Bottle conditioned using 6.3oz Corn Sugar, total bottling batch size was 6 gallons 3 pints
Tasting: In bottle conditioning now, pre bottling sampling was the best IPA I have ever tasted, well ballanced and will make me very hoppy - Irie Mon!
