Hooraay! IPA

Hooraay! It's beer! ...Well not yet it's not. I'll be brewing this one on Sunday. The ingrediant list is a bit odd for an IPA but it's gotta be a winning combination. I'll report back and let you know if I'm right.

Beer: Hooraay! IPA Style: India Pale Ale
Type: All grain Size: 6 gallons
Color:
13 HCU (~9 SRM)
Bitterness: 65 IBU
OG: 1.066 FG: 1.015
Alcohol: 6.6% v/v (5.2% w/w)
Water: Carbon filtered, cold tap water treated with gypsum and salts.
Grain: 11 lb. British pale
2 lb. German Munich
10 oz. Belgian biscuit
8 oz. Flaked barley
1 lb. American crystal 20L
Mash: 70% efficiency
Dough-in all grains at 1.3qt/lb with 5 gallons of 168° water in preheated rectangular cooler with drilled manifold and rest 153° for an hour. Recirculate first runnings until clear and then drain into kettle. Batch sparge with 3.5 gallons of 178° water and recirculate until clear again. Then drain into kettle and bring 8 gallons or runoff to a boil.
Boil: 60 minutes SG 1.049 8 gallons
Keep full rolling boil for an hour or until down to 6 gallons with Irish moss added with 15 minutes left. Chill wort with immersion chiller and aerate as it is transfered into the fermenter.
Hops: 1 oz. Northern Brewer (8.5% AA, 60 min.)
1 oz. Northern Brewer (8.5% AA, 45 min.)
1 oz. Willamette (5% AA, 30 min.)
1 oz. Willamette (5% AA, 15 min.)
1 oz. Saaz (aroma)
Yeast: Pitch about a pint of WhiteLabs English Ale (WLP002) slurry, from the primary of the brown ale I brewed a few weeks back, into 68° wort.
