Sunshine NewtDreams Summer Ale

A nice light but malty IPA. Very refreshing. The new Hallertauer
Traditional hops are wonderful and make a nice light escape from
the big C hops of the northwest. A great summertime ale.

Beer: Sunshine NewtDreams Summer Ale Style: India Pale Ale
Type: All grain Size: 12 gallons
Color:
14 HCU (~9 SRM)
Bitterness: 47 IBU
OG: 1.061 FG: 1.015
Alcohol: 5.9% v/v (4.7% w/w)
Water: Pre-boiled Daly City water.
Grain: 20 lb. British pale
2 lb. German Munich
2 lb. Belgian aromatic
1 lb. Belgian biscuit
1 lb. Belgian CaraVienne
Mash: 75% efficiency
Add 7 gallons water to raise temp to 152C° for 20 min.
Remove 2 gallons of thick mash and boil for 10 min.
Return to main mash to raise temp to 157C° for 30 min.
Sparge with 185C° to get 14 gallons sweet wort.
Boil: 90 minutes SG 1.052 14 gallons
Hops: 3 oz. Hallertauer Traditional (5.4% AA, 90 min.)
2 oz. Hallertauer Traditional (5.4% AA, 40 min.)
2 oz. Hallertauer Traditional (5.4% AA, 20 min.)
3 oz. Hallertauer Traditional (aroma)
Yeast: White Labs English Ale yeast (Like 1968) from an amber ale yeast cake.
Log: First wort hop 3 oz. of Hallertauer Traditional.
Add 1 oz. Hallertauer Traditional at knock out.
Dry hop with 2 oz. Hallertauer Traditional in the secondary for two weeks.
Rack to tritary for 1 week then bottle and keg.
