Hop Head IPA

This was my first attempt at an overhopped IPA. The wheat extract was used to give it an extra creamy head.

Beer: Hop Head IPA Style: India Pale Ale
Type: Extract w/grain Size: 5 gallons
Color:
12 HCU (~8 SRM)
Bitterness: 46 IBU
OG: 1.058 FG: 1.015
Alcohol: 5.5% v/v (4.3% w/w)
Grain: 1 lb. British pale
1 lb. American crystal 20L
Boil: 60 minutes SG 1.144 2 gallons
6 lb. Light malt extract
1 lb. Wheat extract
Hops: 3 oz. Cascade (6% AA, 60 min.)
2 oz. Centennial (10.5% AA, 15 min.)
2 oz. Centennial (aroma)
Yeast: wyeast 1028 (london ale)
Log: Fermented at 68° for 7 days. Transferred to secondary and dry hopped for 3 days.
Carbonation: Force carbonated in corny keg.
Tasting: The aroma of this beer was unbelievable. However, the taste was much more bitter than anticipated. The IBU's were not that high and the aroma hops were actually dry hopped so there should not have been bitterness added there. The dry hopping was over 3 days so I'm going to scale that down and try again.
