Oh Molly!

This is a rough copy of Sam Adams IPA. It uses the same hops, American Wyeast for a dry fermentation, a dextrinous malt extract, torrified wheat for that fantastic Sam Adams head, Crystal 70L for color, and oak chips for a perfect finish.

Water: 5g Gypsum, .42g NaCl, .42g MgSO4, and
1g CaCO3
Grain: 1 lb. British crystal 70-80L
.5 lb. Flaked wheat
Steep: 160F steep for 20 minutes.
Boil: 60 minutes SG 1.080 3.5 gallons
7 lb. Light malt extract
Irish moss at 10 minutes
Hops: 3 oz. Spalt (3.5% AA, 60 min.)
2 oz. Kent Goldings (5% AA, 45 min.)
2 oz. Kent Goldings (5% AA, 30 min.)
1 oz. Fuggles (aroma)
Yeast: Wyeast American Ale, 2-day starter.
Carbonation: will shoot for 2.0V CO2.
