Type: All grain Size: 6.25 gallons
Color:
14 HCU (~9 SRM)
Bitterness: 60 IBU
OG: 1.066 FG: 1.018
Alcohol: 6.2% v/v (4.9% w/w)
Water: 1 tbl gypsum added to boil
Grain: 10 lb. British pale 2 row
3 lb. American crystal 20L
Mash: 85% efficiency
Add 2.5 gallons 130 degree water to grains; temp = 122 degrees stir every 5 minutes for 30 minutes; add 1.5 gallons of 170 degree water; temp = 150 degrees stir every 5 minutes and maintain maintain at 150 degrees for 20 minutes; raise temp. to 158 degrees for ten minutes; raise temp to 170 degrees then remove to mash tun; sparge with 5 gallons of 170 degree water.
Boil: 150 minutes SG 1.048 8.5 gallons
Add 1 tbl. of gypsum to wort. Long boil of approx 2.5 hrs or until liquid is reduced to 6.25 gallons. Add hops when indicated and add 1 tsp. of irish moss for final 15 minutes.
Hops: 2 oz. Northern Brewer (7.5% AA, 45 min.)
2 oz. Kent Goldings (5.5% AA, 15 min.)
2 oz. Fuggles (4.75% AA, 15 min.)
2 oz. Fuggles (aroma)
Yeast: White Labs English Ale Liquid Yeast #WLP002.
Made 1 quart starter 24 hours before pitching.
Very active fermentation in 8 hours
