Celebration Sensation

This beer is a clone of Sierra Nevada Celebration Ale, which is a very hoppy red ale that comes out once a year prior to Christmas. This is the fourth time I've tweaked the recipe, but this will be my final version, as I am wonderfully satisfied with the results.

Type: Extract w/grain Size: 5.0 gallons
Color:
44 HCU (~20 SRM)
Bitterness: 78 IBU
OG: 1.067 FG: 1.018
Alcohol: 6.4% v/v (5.0% w/w)
Grain: 4.0 oz. American victory
1.5 lb. American crystal 60L
8.0 oz. Dextrine malt (Cara-Pils)
4.0 oz. Roasted barley
Steep: Steep grains until boil.
Boil: 60 minutes SG 1.096 3.5 gallons
7.0 lb. Light malt extract
1.0 lb. Light dry malt extract
Hops: 2.0 oz. Nugget (13.5% AA, 60 min.)
1.0 oz. Cascade (7.3% AA, 5 min.)
1.0 oz. Chinook (13.2% AA, 5 min.)
1.0 oz. Cascade (aroma)
1.0 oz. Centennial (aroma)
Yeast: American #1056
Log: 12/09/00 Brewed
12/20/00 Second fermentation and dry hopping.(10 days after brewing)
12/29/00 Bottled(10 days after dry hopping)
Carbonation: 2.9 volumes Corn Sugar: 4.99 oz. for 4.5 gallons @ 70°F
The carbonation using 5.0 oz of corn sugar is slightly too much. This will be the only change I make in the future, I'll only use 4.0 oz the next time and adjust from there.
Tasting: This beer has an awesome hoppy aroma as soon as you open the bottle. It is deep burgandy in color, with a rich creamy head due to the dextrine. Be prepared for a wonderfully dry hoppy beer. I never tire of this beer, and alternate between my Aye Carumba IPA and this Celebration recipe. I love dry hopped, unfiltered beer. ENJOY!!!
