Water: Add 1-2 oz Gypsum to Mash/Boil water
Grain: 1 lb. 0 oz. British pale
1 lb. 0 oz. American crystal 20L
8 oz. Dextrine malt (Cara-Pils)
4 oz. Flaked barley
4 oz. Flaked wheat
Mash: 75% efficiency
Single temp infusion mash @154 deg/60 min.
Boil: 60 minutes SG 1.100 3.5 gallons
6 lb. 0 oz. Light dry malt extract
4 oz. Malto Dextrin
0 oz. Irish Moss
Add 1/2 tsp Irish Moss last 15 min of boil.
Add 4 oz Malto-Dextrine at start of boil
Hops: 2.0 oz. Brewers Gold (8.5% AA, 60 min.)
1.0 oz. Fuggles (4.75% AA, 15 min.)
1.0 oz. Kent Goldings (5% AA, 5 min.)
1.0 oz. Kent Goldings (aroma)
2.0 oz. Oak Chips (aroma)
Yeast: Wyeast #1275 - Thames Valley
Log: Dry hop in secondary with 1.0 oz Kent Goldings
Add 2.0 oz steamed and cooled oak chips in bag to secondary
Optional - Add .5 tsp Gelatin prior to bottling
Carbonation: 2.0 volumes Dried Malt Extract: 3.99 oz. for 5.0 gallons @ 65°F
