Alcohol: 8.0% v/v (6.3% w/w)
Water: 2 TBS gypsum in mash
2 TBS gypsum in sparge water
Grain: 13 lb. American 2-row
10 oz. American crystal 45L
10 oz. Dextrine malt (Cara-Pils)
Mash: 73% efficiency
Mash 150 to 152 for 60 minutes. Sparge normally.
Boil: 90 minutes SG 1.053 7.5 gallons
8 oz. Corn sugar
Hops: 3 oz. Farmhouse Pliny Pack 90 (CTZ) (13.9% AA, 90 min.)
.75 oz. Farmhouse Pliny Pack 45 (CTZ) (13.9% AA, 45 min.)
1 oz. Farmhouse Pliny Pack 30 (Simcoe) (12.3% AA, 30 min.)
3.5 oz. Farmhouse Pliny Pack 0 (1 Centenniall, 2.5 Simcoe) (11% AA, 0 min.)
3 oz. Farmhouse Pliny Pack Dry 1 (1 oz ea - CTZ, Centennial, Simcoe) (aroma)
.75 oz. Farmhouse Pliny Pack Dry 2 (0.25 oz ea - CTZ, Centennial, Simcoe) (aroma)
Yeast: 2 packages Safale US-05
Log: Aerate well and ferment at 65°. Rack to secondary, add first addition of dry hops, rouse every 3 days, 9 days total. Add second dry hop addition and rouse every other day, 5 days total (14 day total dry hop). Cold crash 3 days at 34° and keg.
Carbonation: Keg and Force Carbonate
