C-S-C-O Grand IPA

Recipe developed for my Uncle Ron. The initials stand for his dogs, past and present. They are/were all great dogs, and I hope this IPA is worthy of their honor.

Type: All grain Size: 5.5 gallons
Color:
8 HCU (~6 SRM)
Bitterness: 88 IBU
OG: 1.062 FG: 1.014
Alcohol: 6.2% v/v (4.9% w/w)
Grain: 8 lb. American 2-row
3.5 lb. German Munich
.5 lb. Dextrine malt (Cara-Pils)
1 lb. Flaked wheat
Mash: 72% efficiency
Mash in at 151 F for 60 minutes, then mash out via decoction for 10 minutes at 170 F. Continuous fly sparge to collect 7.5 gallons to brew pot.
Boil: 60 minutes SG 1.046 7.5 gallons
Irish Moss last 15 minutes
Hops: 1 oz. Columbus (13.1% AA, 60 min.)
.25 oz. Citra (13.2% AA, 45 min.)
.25 oz. Centennial (8.7% AA, 45 min.)
.25 oz. Citra (13.2% AA, 30 min.)
.25 oz. Centennial (8.7% AA, 30 min.)
.5 oz. Citra (13.2% AA, 5 min.)
.5 oz. Centennial (8.7% AA, 5 min.)
1 oz. Amarillo (aroma)
1 oz. Citra (aroma)
1 oz. Simcoe (aroma)
Yeast: S-05 (2 packs pitched directly to aerated wort)
Log: Ferment for 7-10 days at 66 F. Once fermentation has slowed, add 1 oz each of Simcoe, Amarillo, and Citra. Rouse on day s 2,4, and 6, then cold crash on day 7. Keg and force carbonate.
