Wintertime Ale

This beer is named after a song from the rock band SLAPBACK sm.

Type: Extract w/grain Size: 5.0 gallons
Color:
119 HCU (~40 SRM)
Bitterness: 40 IBU
OG: 1.070 FG: 1.020
Alcohol: 6.4% v/v (5.1% w/w)
Water: Tap water from EBMUDD here in the bay area.
Grain: 4.7 oz. American crystal 60L
4.7 oz. American black patent
7.7 oz. British chocolate
4.7 oz. Roasted barley
Steep: Steeped the speciality grains before the boil. Added lot's of whole cloves, I used powdered ginger, powdered cinnamon, dyhydrated orange peel, powdered nutmeg (very little) & vanilla extract.
Boil: 45 minutes SG 1.117 3.0 gallons
8.59 lb. Light malt extract
3.8 oz. Brown sugar
Added 4oz maltodextrin, extract, & brown sugar before the boil. Then added irish moss at last 10 minutes.
Hops: 0.95 oz. Fuggles (4.75% AA, 60 min.)
0.95 oz. Northern Brewer (8.5% AA, 60 min.)
0.95 oz. Northern Brewer (8.5% AA, 30 min.)
0.96 oz. Fuggles (4.75% AA, 15 min.)
Yeast: 1 package of nottingham ale yeast

Secondary: October 13,2003
Bottled: October 18, 2003
Carbonation: 3/4 Cup corn sugar
Tasting: 10/13/03 This beer after 4 days fermentation tatses good! and strong! The spices remind me of pumpkin pie. Final gravity was 1.020 making a nice 6.4% beer. It's a little hazy, I think from the powdered crap? or maltodextrin?
10/18/03 after sitting again for 5 days the stuff settled and man, this stuff is already getting better. The spices have mellowed a bit, but the alcohol comes through. I can't wait until it's aged/conditioned and has carbonation. This will probably be good for the Halloween party! (in 2 weeks)
