Oh So Fine Barleywine II

Will use a blow off tube this time to avoid the lid blowing off the fermentor like last time. This will be a little darker and a little stronger than the first version.

Beer: Oh So Fine Barleywine II Style: Barley Wine
Type: Extract w/grain Size: 5 gallons
Color:
82 HCU (~31 SRM)
Bitterness: 68 IBU
OG: 1.161 FG: 1.028
Alcohol: 17.1% v/v (13.4% w/w)
Water: Same old Kansas City tap water.
Grain: 3 lb. American crystal 60L
4 oz. Dextrine malt (Cara-Pils)
Steep: Steeped grains from start of heat to 180°, then discarded.
Boil: 60 minutes SG 1.201 4 gallons
8 lb. Light dry malt extract
7 lb. Amber dry malt extract
2 lb. Honey
Added honey @ 15 minutes left in boil. Also added irish moss @ 15 minutes left. Added 1 oz. of dried ginger @ 5 minutes left.
Hops: 3 oz. Chinook (12% AA, 60 min.)
3 oz. Northern Brewer (8.5% AA, 60 min.)
1 oz. Nugget (12% AA, 60 min.)
.5 oz. Tettnanger (4.5% AA, 60 min.)
Yeast: Started off with WLP051 in a 1 pint starter. Then added Champagne yeast in the secondary to finish up to 17%.

Carbonation: I use 8 Primetabs per 22oz. bottle.
