Honey Malt Wine

Beer: Honey Malt Wine Style: Barley Wine
Type: Extract w/grain Size: 3 gallons
Color:
21 HCU (~12 SRM)
Bitterness: 63 IBU
OG: 1.143 FG: 1.025
Alcohol: 15.2% v/v (11.9% w/w)
Water: Using straight-up grocery store "drinking" water. No special treatment.
Grain: 2 lb. American 2-row
2 lb. American crystal 10L
Steep: Steep all grains in 1 gal. 150-160° H2O for 30 min.
Boil: 60 minutes SG 1.107 4 gallons
6.6 lb. Light malt extract
3 lb. Honey
Irish Moss 1/2 tsp. @ 45 min. Add honey to the boil @ 50 min.
Hops: 1.5 oz. Cascade (6% AA, 60 min.)
.75 oz. Cascade (6% AA, 45 min.)
.75 oz. Cascade (6% AA, 30 min.)
1 oz. Northern Brewer (aroma)
Yeast: WYeast London Ale Liquid yeast in a 1 quart starter. I use 1# of honey boiled for 10 min. in 1 qt. H2O. Pour into a suitable container, add balloned yeast package, stopper and airlock. Let sit 24-48 hrs. pre-pitching.
