Alcohol: 18.6% v/v (14.6% w/w)
Water: Use spring water with 1 teaspoon of gyspum.
Grain: 12.5 lb. British pale
1.44 lb. Dextrine malt (Cara-Pils)
1.08 lb. British Carastan light
5.6 oz. Roasted barley
3.75 lb. Flaked barley
Mash: 50% efficiency
Mash 10 gal. of the crushed grains with gyspum into hot water and raise the temp. to 155° for 30 min. Remove 4 gal and boil it for 10 min then return to raise temp to 157° for 30 min.

Sparge at 170° to collect 6 gal. sweet wort and add light malt extract and caned sugar.
Boil: 90 minutes SG 1.097 7.5 gallons
11.4 lb. Light malt extract
6.8 oz. Cane sugar
2 teaspoons of Irish Moss the last 30 of the boil.
Hops: 1.99 oz. Galena (13% AA, 90 min.)
1.99 oz. Galena (13% AA, 45 min.)
1.32 oz. Galena (13% AA, 15 min.)
2 oz. Liberty (aroma)
Yeast: Add Irish ale yeast.
Log: Ferment at 65° for 2 weeks in the primary and 4 weeks in the secondary. Flavour will improve as the beer ages.
Carbonation: 2.3 volumes Keg: 26.7 psi @ 72°F
Dried Malt Extract: 6.91 oz. for 5 gallons @ 72°F
