6 HCU (~5 SRM)
Bitterness: 29 IBU
OG: 1.054 FG: 1.014
Alcohol: 5.1% v/v (4.0% w/w)
Water: Tacoma, WA water with 2 tsp 5.2 added to mash.
Grain: 4.58 lb. American 2-row
.25 lb. American crystal 40L
0.60 lb. Dextrine malt (Cara-Pils)
.25 lb. Honey malt
Mash: 78% efficiency
Infusion Mash: 158 for 60 minutes, mashout at 165 (10 minutes or so)
Boil: 60 minutes SG 1.040 4 gallons
Added 3 oz. of corn syrup to the boil for the final 15 minutes
Hops: 0.58 oz. Fuggles (4.75% AA, 60 min.)
0.43 oz. Fuggles (4.75% AA, 30 min.)
0.14 oz. Kent Goldings (5% AA, 15 min.)
Yeast: Special yeast created from recaptured WL007 and WL004
Log: Brewed on Super Bowl eve, 2007
Efficieny was 81% for this batch (my system is now consistantly ~80%!)
Fermented in V-Vessel conical fermenter
Fermented for 12 days then moved to very cool garage
Kegged the next day
Carbonation: Forced C02, 10lbs
