Blackstrap Mild

A potent but dry mild ale, moderately hopped and fortified with a
touch of blackstrap molasses for a subtle and unique sweetness.

Bitterness: 33 IBU
OG: 1.048 FG: 1.006
Alcohol: 5.4% v/v (4.3% w/w)
Water: Kalamazoo water, boiled/cooled to remove chlorine and carbonate.
Added Buffer 5.2 to mash to stabilize pH of highly alkaline city water.
Grain: 6 lb. Mild Malt
1 lb. Crystal 10L
1 lb. Crystal 20L
Mash: 70% efficiency
2 gallons strike water. 4 gallons to sparge.

Protein Rest: 120 for 20
Sacc. Rest: 150 for 60
Mash Out: 175 for 20
Boil: 60 minutes SG 1.040 6 gallons
1 lb. Blackstrap Molasses
Irish Moss @ 15
Gelatin finings in secondary
Hops: .5 oz. Northern Brewer (9.8% AA, 60 min.)
.5 oz. Northern Brewer (9.8% AA, 20 min.)
Yeast: White Labs "Dry English Ale" with 1 pint starter containing 3/4 cup
extra light DME and 1/2 tsp. yeast nutrient
