Coopers Sparklin Ale Clone

This is a clone recipe for Cooper's Sparklin Ale made in South Australia. I used the recipe from BYO with only slight modifications.

Type: Extract w/grain Size: 5 gallons
Color:
10 HCU (~7 SRM)
Bitterness: 18 IBU
OG: 1.052 FG: 1.009
Alcohol: 5.6% v/v (4.4% w/w)
Water: Tap Water
Grain: 1 lb. American crystal 20L
Steep: Steep specialty grains in 3 gallons of water at 150° F for 45 minutes.
Boil: 60 minutes SG 1.087 3 gallons
4 lb. 8 oz. Light dry malt extract
1 lb. Belgian candi sugar
Belgium Candi Sugar and Irish moss at 30 minutes
Hops: .33 oz. Pride of Ringwood (10.1% AA, 60 min.)
.5 oz. Pride of Ringwood (10.1% AA, 15 min.)
.5 oz. Pride of Ringwood (10.1% AA, 3 min.)
Yeast: 1.5 liters of active yeast cultured from Coopers Sparkling Ale bottle.
Log: Started on 10/9/05, Bottled 10/23/05
Very active fermentation, foam out of airlock for days. Racked to secondary after 7 days. Fermented around 70° F
Carbonation: Bottle Conditioned with 3/4 cup corn sugar.
Tasting: After 11 days in the bottle, still tastes rather young. However, has the right Coopers flavor, should balance out nicely after further aging.
