Honey Brown Ale

Steeped 8 bags of Chinese Oolong Tea pre-boil. Extract used was German Gold.

22 HCU (~13 SRM)
Bitterness: 34 IBU
OG: 1.062 FG: 1.015
Alcohol: 6.1% v/v (4.8% w/w)
Water: Added 1 tsp of Gypsum at start of boil.
Boil: 60 minutes SG 1.083 3 gallons
6 lb. Amber malt extract
5 oz. Brown sugar
5 oz. Honey
Added brown sugar & honey with 20 minutes left in boil. Added 1 tsp of Irish Moss with 15 minutes left in boil.
Hops: 1.25 oz. Cascade (6.4% AA, 60 min.)
.5 oz. Cascade (6.4% AA, 15 min.)
.25 oz. Cascade (aroma)
Yeast: Liquid California Ale Yeast harvested from previous batch.
Log: Brewed on 12/31/06. Primary fermentation around 65°.
