My Brown-Eyed Girl

I originally wanted to brew a hop-flavorful American Amber,
but went a bit overboard on the hops and dark malts, so it
became an American Brown.

Type: All grain Size: 5.5 gallons
Color:
34 HCU (~17 SRM)
Bitterness: 62 IBU
OG: 1.057 FG: 1.016
Alcohol: 5.2% v/v (4.1% w/w)
Water: 1/2 tsp. gypsum plus 1/2 ml 88% lactic acid added to the mash.
Grain: 4.5 lb. American 2-row
5.5 lb. Belgian pale
4 oz. Belgian CaraMunich
4 oz. Belgian Special B
8 oz. British crystal 50-60L
2 oz. British chocolate
12 oz. Belgian CaraPils
Mash: 72% efficiency
Single infusion, 155° F for 60 minutes.
Boil: 90 minutes SG 1.044 7 gallons
Hops: 1.0 oz. Centennial (10.1% AA, 60 min.)
0.5 oz. Fuggles (4.2% AA, 20 min.)
0.5 oz. Northern Brewer (6.9% AA, 20 min.)
0.75 oz. Saaz (3.75% AA, 10 min.)
0.75 oz. Centennial (10.7% AA, 10 min.)
Yeast: Wyeast 1056, 750-ml starter.
Log: Brewed Spring 1998.
Carbonation: 3/4 cup corn sugar priming.
Tasting: I think it needed more maltiness and a little more chcocolate
to stand up to the hops. However, in competition this beer
took two first place ribbons and a second, and was an MCAB
qualifier and NHC finalist.
