Three Stooges Nut Brown Honey Ale

This recipe is a variation of Saunders Nut Brown Ale as given by Mr.
Pappazian.

Beer: Three Stooges Nut Brown Honey Ale Style: American Brown
Type: Extract w/grain Size: 5.5 gallons
Color:
42 HCU (~19 SRM)
Bitterness: 28 IBU
OG: 1.074 FG: 1.018
Alcohol: 7.2% v/v (5.7% w/w)
Water: 1/4 tsp. of gypsum added to reverse osmosis water.
Grain: 2.6 oz. British brown
1.58 lb. American crystal 60L
2.6 oz. British chocolate
Steep: Crystal, chocolate and brown malts milled together and steeped in
grain bag held in 4 gallons of H20 at 150° for 30 minutes. Grains removed after this 30 minutes.
Boil: 75 minutes SG 1.102 4 gallons
7.91 lb. Light malt extract
2.11 lb. Honey
1/4 tsp. of ground irish moss added during final 15minutes of boil.
Wort chilled to 72degrees within 10minutes using homemade copper
chiller.
Hops: 2.10 oz. Styrian Goldings (5.5% AA, 60 min.)
1.05 oz. Kent Goldings (5% AA, 15 min.)
.5 oz. Kent Goldings (aroma)
.25 oz. Cascade (aroma)
Yeast: Wyeast American Ale Yeast II (1272) activator pack pitched at 72
degrees.
Log: Brewed on 12/24/2005. Wort sparged into 2 gallons of RO water.
Primary fermentation in 6.5 gal glass carboy.
