Chuck's Honey Brown

Honey brown ale that will keep
you toasty on cold winter nights.

Type: Extract w/grain Size: 6 gallons
Color:
31 HCU (~16 SRM)
Bitterness: 25 IBU
OG: 1.067 FG: 1.015
Alcohol: 6.8% v/v (5.3% w/w)
Water: Spring water.
Grain: 2 lb. American 2-row
8 oz. American crystal 60L
2 oz. Roasted barley
Steep: 20 mins @ 150°. 30 mins @ 170°.
Boil: 60 minutes SG 1.202 2 gallons
6 lb. 6 oz. Amber malt extract
3 lb. Honey
1 tsp Irish moss 15 prior to
end of boil.
Hops: 2 oz. Perle (8% AA, 60 min.)
2 oz. Cascade (6% AA, 45 min.)
2 oz. Fuggles (4.75% AA, 30 min.)
Yeast: Wyeast American Ale 1056. Make
starter with 1 cup of honey boiled
in 1 pint of water for fifteen mins.
Pitch starter one to two days later.
Log: Primary ferment for 7 days @ 68°.
Move to secondary for 10 days @ 68°.
Bottle.
