Alcohol: 4.4% v/v (3.5% w/w)
Water: 1 TBS 5.2 Mash Stabilizer.
Grain: 8 lb. American 2-row
4 oz. Belgian biscuit
1 lb. Carabrown
5 oz. American chocolate
1 oz. Special Roast
3 oz. Gambrinus Honey Malt
Mash: 75% efficiency
Single infusion mash at 153°F for 60 minutes using 1.3 quarts per pound. Continuous sparge with 170°F water to attain 7 gallons in brewpot.
Boil: 60 minutes SG 1.038 7.0 gallons
1 tsp rehydrated Irish Moss for last 15 minutes of boil.
Hops: 1 oz. Fuggles (4.8% AA, 60 min.)
.5 oz. Kent Goldings (4.5% AA, 30 min.)
.5 oz. Kent Goldings (4.5% AA, 15 min.)
Yeast: White Labs 005
