Here is a new castle clone. The cascade
hops are homegrown its kinda of a guess as to AA content.

Color:
34 HCU (~17 SRM)
Bitterness: 30 IBU
OG: 1.047 FG: 1.010
Alcohol: 4.8% v/v (3.8% w/w)
Grain: .5 lb. Belgian biscuit
.5 lb. American chocolate
.25 lb. Roasted barley
Mash: 80% efficiency
The partial mash was started on the stove
top and kept at temperature in the oven. It was -4F° when we started
the burner so it was nice to be inside for that part.
Boil: 50 min minutes SG 1.045 12 gallons
11 lb. 6 oz. Light dry malt extract
Hops: 3.125 oz. Cascade (6% AA, 60 min.)
.5 oz. Kent Goldings (4.8% AA, 60 min.)
Yeast: safale 04 English ale
Carbonation: force carbonate in keg at 15 psi
