Lite Amber Beer

This beer is of the Eglish Session Bitter variety, by staying true with Fuggle hops & Wyeast London ESB.

Grain: .5 lb. American crystal 60L
Boil: 45 minutes SG 1.030 6 gallons
3.3 lb. Light malt extract
1 lb. Belgian candi sugar
My boil time is less because I used Crystal which doesn't require really any extra time. I brought to a boil and 5 minutes later started my hopping schedule. I added yeast nutrient & Irish Moss in the last 10 min of boil. This was a full wort boil.
Hops: 1 oz. Fuggles (4.75% AA, 40 min.)
1 oz. Fuggles (4.75% AA, 30 min.)
1 oz. Fuggles (4.75% AA, 20 min.)
.5 oz. Fuggles (4.75% AA, 5 min.)
Yeast: Wyeast London ESB (This is a perfect yeast for this type of beer, it flocculates nicely, leaving a the clearest ale I've seen to date....without filtering, and a great flavor with fruit afternotes)
Log: Ferment in the primary for 4-5 days. Rack to secondary for 8-10 days (then move to refridgerator for 2-3 days for added clarity). Then rack to bottling bucket for bottling, etc. If you place in fridge for cold settling, be sure to suck up a little yeast off the bottom into the bottling bucket to ensure there is enough yeast for carbonating purposes. In the secondary (this is the most important step in converting this beer to a "Lite" beer.....I add 4 crushed tablets of Beano in the bottom of the secondary and rack on top of it, it's necessary for getting the extra low FG, low carb, and slightly increased ABV)
