Steep: Steep grains at 155 degees for 45 minutes. Rinsed with 2 gallons of 165 degree water.
Boil: 70 minutes SG 1.053 17 gallons
21 lb. Light malt extract
Irish Moss 3 tsp. at 15 min.
Malt dextrine added 2 lbs. at start of boil.
Hops: 2 oz. Northern Brewer (7.4% AA, 60 min.)
2 oz. Cascade (6.8% AA, 45 min.)
1.5 oz. Kent Goldings (4.2% AA, 45 min.)
1 oz. Kent Goldings (4.2% AA, 30 min.)
1.5 oz. Kent Goldings (4.2% AA, 15 min.)
Yeast: Wyeast 1968 London Extra Special x 3
Log: Split batch into three fermentors and dry hopped with 2 oz.(.666 oz. per fementor) of Goldings.
