Very Dunkel Weizen

This beer turned out to be quite bitter, pleasant but, bitter. I added about 1oz of fresh mint in the steeping stage for a fresh bite, quite pleasant. Try this if you like a dark bitter beer.

Mash: 80% efficiency
150 degrres for 60 min. Sparge with 170 degree water 2 gals
Boil: 60 minutes SG 1.067 4 gallons
6.00 lb. Wheat extract
1 t iris moss last 15 min of boil
1 oz fresh mint leaves and steep for 15 min
Hops: 0.97 oz. Northern Brewer (8.5% AA, 60 min.)
0.47 oz. Cascade (6% AA, 15 min.)
.25 oz. Willamette (aroma)
Yeast: 10g Nottingham dry at 82 degrees
Carbonation: 3.6 volumes Corn Sugar: 6.89 oz. for 4.5 gallons @ 78°F
