Strong Happy Toby Doggie Lager

Made with sorghum, honey and dry malt extract. Named after our strong happy dog, Toby.

Type: Extract Size: 19.4 liters
Color:
9 HCU (~7 SRM)
Bitterness: 26 IBU
OG: 1.065 FG: 1.011
Alcohol: 6.9% v/v (5.4% w/w)
Water: Soft water, no adjustment.
Boil: 60 minutes SG 1.050 25 liters
6 lb. Light sorgum malt extract
2 lb. Orange blossom honey
1 lb. Light dry malt extract
3.5 oz. Oats
At 25 minutes before end of boil, 100 grams of oats were added to help with protein and yeast nutrient.
At 15 minutes before end of boil, 1 teaspoon of Irish Moss was added with the hop quota at that time.
Hops: 20g Target (8% AA, 60 min.)
6g Target (8% AA, 30 min.)
5g Saaz (2.3% AA, 15 min.)
2g Target (aroma)
5g Saaz (aroma)
Yeast: SafLager yeast, from the bottom of the fermenter of my previous batch.
Log: Started Sunday Oct 28, 2007. Fermented at 50°F. Siphoned Nov. 4, 2007. Lagered at 46°F. Bottled Dec 2, 2007
Carbonation: 2.2 volumes Cane Sugar: 65.2g for 17 liters @ 48°F
Tasting: I write this in late April 2008. The beer is now a nice hoppy light lager, despite the high alcohol content. It's very fruity, possibly due to the use of sorghum, maybe due to the honey. Next time I would leave off the oats, and make a larger volume, 24 liters, to lower the alcohol content.
