Eadhran Ale 2002

This my CURRENT version of my first beer. Trying for a spiciness, not too bitter, with good head retention.
I brewed it in late spring this year, poor head retention, so I am adding wheat extract.
UNFORTUNATELY, I lost the actual recipe of what I used this last time.

Type: Extract w/grain Size: 4 gallons
Color:
24 HCU (~13 SRM)
Bitterness: 19 IBU
OG: 1.060 FG: 1.010
Alcohol: 6.4% v/v (5.0% w/w)
Water: Dedham MA well water, will be getting an analysis soon.
Grain: .5 lb. American crystal 40L
1 lb. Flaked wheat
Steep: 30 minutes at 150°
Boil: 75 minutes SG 1.061 3.875 gallons
5 lb. Amber malt extract
.75 lb. Wheat extract
50g Starter (Light dme in pt of water, pint fig into final volume)
pinch of Irish moss in last ten minutes of biol
Hops: 10g Cascade (6% AA, 60 min.)
15g Chinook (12.1% AA, 15 min.)
15g Chinook (aroma)
Yeast: Wyeast 1028, starter as noted in boil section
Carbonation: 2.5 volumes Corn Sugar: 94.1g for 4 gallons @ 62°F
